Brinjal Drumstick curry

Brinjal Drumstick curry goes well with south Indian style Sambar rice and its a very common south Indian recipe. Lets see how to prepare it.

Ingredients: ( 1 cup = 240 ml)

2 tbsp oil

½ tsp mustard seeds

2 onion, medium size

Few curry leaves

2 tomatoes, medium size

¼ tsp turmeric powder

1.5 tsp chilli powder

1 tsp coriander powder

Salt to taste

1 drumstick, chopped

3 to 4 brinjal, chopped (keep in water)

 

Preparation:

  • Heat a kadai, add 2 tbsp oil and ½ tsp mustard, allow to splutter
  • Add onion, few curry leaves and sauté until it turns translucent
  • Add tomatoes and cook 2 minutes or until it turns soft
  • add 1.5 tsp chilli powder, ¼ tsp turmeric powder, 1 tsp coriander powder and salt to taste
  • mix well and cook for 2 minutes
  • then add chopped brinjal and drumstick
  • add 1 cup water and cook until vegetables are cooked well

Brinjal Drumstick Curry is now ready to serve!!
