How to make Sambar Rice | Sambar Sadam

Sambar rice is one of the most famous south Indian recipe. The home made fresh masala used in this recipe gives excellent taste and splendid aroma. Ghee used in this recipe makes it very suitable for children. I have only used ghee in final phase but it can also substitute oil. This goes well with Appalam/Papad, that’s a traditional combination and also with pickle and potato fry/chips. Do try this recipe and enjoy. Lets now get into the recipe which is followed by step by step photo recipe.

Servings: 4

 

Ingredients (1 cup = 240 ml)

For sambar powder:

1 tsp oil

2 Tbsp coriander seeds

2 tsp chana dal

1 tsp cumin seeds/jeera

½ tsp pepper

¼ tsp fenugreek seeds

6 dry red chillies

For pressure cooking:

1 cup rice

¾ cup toor dal

¼ tsp turmeric powder

1 tsp oil

1/4 tsp asafoetida/hing

Other ingredients:

1 tbsp oil

1 onion, medium size finely chopped

Few curry leaves

1 tomato, medium size

1 carrot, small chopped

10 beans, chopped

1 radish, small chopped

2 brinjal, medium size chopped

1 drumstick, chopped

¼ tsp turmeric powder

½ tsp chilli powder (optional)

Tamarind water (amla size tamarind soaked in water for 10 mins)

Salt to taste

Ghee as required

 

Preparation:                                                                                                                                                                        

  • Firstly heat medium size pan, add 1 tsp oil, 2 Tbsp coriander seeds, 2 tsp chana dal, 1 tsp cumin seeds, ½ tsp pepper, ¼ tsp fenugreek seeds and dry red chillies and roast till golden brown.
  • Then grind this as fine powder and keep aside
  • In cooker add 1 cup rice and ¾ cup toor dal, 1/4 tsp turmeric powder, 1/4 tsp hing/asafoetida and  1 tsp oil and pressure cook for five whistles in medium flame
  • In a kadai add 1 tbsp oil, add mustard seeds and allow it to splutter, then add onion, curry leaves and sauté well
  • Then add tomatoes and sauté well
  • Furthermore add vegetables, turmeric powder, chilli powder(optional), salt and sauté for a minute
  • Add 2 cups of water and allow it to boil 5 minutes
  • Now add tamarind water, grinded sambar powder and boil 10 minutes or boil until vegetables are fully cooked
  • Add this cooked vegetables in pressure cooked rice and dal and mix well, can also add some water to adjust consistency
  • Check the salt now and add salt as per your taste and mix well
  • finally cook this for 2 mins in medium flame

Now sambar rice/sambar sadam is ready!!

 

Step by Step recipe with photos

  • To start with, heat medium size pan, add 1 tsp oil, 2 Tbsp coriander seeds, 2 tsp chana dal, 1 tsp cumin seeds, ½ tsp pepper, ¼ tsp fenugreek seeds and 6 dry red chillies and roast till golden brown.

  • Grind this as fine powder and keep aside.
  • In cooker add 1 cup rice and  ¾ cup toor dal, 1/4 tsp turmeric powder, 1/4 tsp hing/asafoetida and  1 tsp oil and pressure cook for five whistles in medium flame.

  • In a kadai add 1 tbsp oil, add mustard seeds and allow it to splutter, then add onion, curry leaves and sauté well.

  • Then add tomatoes and sauté well

  • Then add vegetables, turmeric powder, chilli powder(optional), salt and sauté for a minute

  • Add 2 cups of water and allow it to boil 5 minutes

  • Now add tamarind water, grinded sambar powder and boil 10 minutes or boil until vegetables are fully cooked.

  • Once the steam sets off, open the cooker and mash the rice and dal gently.

  • Add this cooked vegetables in pressure cooked rice and dal and mix well, can also add some water to adjust consistency

  • Check the salt now and add salt as per your taste and mix well
  • finally cook this for 2 mins in low flame

Sambar Rice

Sambar Rice/Sambar Sadam is now ready!! Serve the Sambar rice hot with ghee over it.
