Mint rice is a flavorful and simple rice recipe that can be prepared in just 10 minutes if the cooked rice is ready. Mint has several health benefits and it is rich in antioxidants, hence it is very good for cold and also for indigestion. We are using ginger in this recipe which also is great for indigestion. Let us see how to make this healthy recipe.

 

Ingredients: (1 cup = 240 ml)

For grinding:

2 cups mint leaves

1.5 inch ginger

2 to 3 green chillies

Lemon juice from half lemon

Other ingredients:

2 tbsp oil

½ tsp mustard seeds

½ tsp urad dal

Few cashew nuts

2 dry red chillies, broken

2 cups cooked rice

Salt to taste

 

Preparation:

  • In a blender jar add 2 cups of mint leaves (washed), 1.5 inch ginger, 2 green chillis and half lemon juice. Blend into fine paste
  • Heat a pan and add 2 tbsp oil, mustard seeds, urad dal and allow it to splutter
  • Add 2 dry red chillis and cashews, then add grounded paste, salt and cook for 2 minutes in medium flame
  • Add cooked rice and mix it gently(Check for the salt)

Finally mint rice ready to serve!!
